  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • Baking powder, 1/2 tsp
  • 1 tsp cinnamon powder
  • 1/4 teaspoon salt
  • 14 cup unsalted butter
  • 1 large egg
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar
  • 1 tbsp of granulated Sugar
  • 1 tbsp of milk
  • 1 medium apple, cut into chunks

The Crumb Topping

  • Brown sugar, 2 tbsp
  • Half a tablespoon of granulated Sugar
  • Cinnamon powder pinch
  • 1 tbsp unsalted butter, melted
  • 2 tbsp all-purpose flour

Instrucciones

Prep

Pre-heat the oven to 425degF. Spray a six-count muffin pan with nonstick cooking spray. Peel the apple, and then cut it into chunks of 1/2 inch thickness.

Combine

Combine the flour with the baking powder, baking soda and cinnamon in a large mixing bowl. Whisk well. Set aside.

Beat

In a stand mixer with paddle attachment, beat the butter and sugars at high speed. Add the eggs, vanilla extract, sourcream, and whipped cream after 2 minutes. Beat the mixture on medium speed until it is creamy. Add the dry ingredients, the milk and the wet ingredients to the mixture and continue beating for another 2 minutes.

Fold

Fold the apples in the batter, and then set it aside.

Combination

In a medium-sized bowl, combine brown sugar, granulated and cinnamon. Mix the butter into the flour and stir until it forms large crumbs.

Spoon

Fill each muffin cup to the top with batter. Sprinkle the crumble topping over each muffin.

Bake

The muffins should be baked for 5 minutes, at 425degF. Reduce the temperature of the oven to 350degF. Bake for 15 min. Allow the muffins in the pan to cool down for 5 minutes before removing.
